In the farthest North West corner of South Dakota is the small community of Buffalo — named appropriately for the large herds of buffalo (bison) that once roamed the area. That is where you will find the 8,500 acre Jumpoff Ranch. Scott and Susan Peterson, husband and wife, bought the land in 1997 from an elderly couple who they befriended years earlier. Enjoying the vast acreage with them are their two children and approximately 1,000 bison. Their family pet? You guessed it, a bison. Buster was an orphan bull that the Peterson children talked Scott into keeping and raising as a pet.

A bison sirloin steak is lower in fat, cholesterol, calories — and higher in iron — than a skinless chicken breast. It's the original, healthy red meat. Legendary in appeal, unparalleled in taste.
